Recipe for muesli bars
Ingredients for 8 to 10 bars
125 g butter
80 g brown sugar
A pinch of salt
50 g maple syrup
50 g honey
200 g fine rolled oats
60 g dessicated coconut flakes
50 g sunflower seeds
100 g slivered almonds
100 g goji berries
Pre-heat the oven to 160 degrees (heat from both below and above) and place a sheet of baking paper on a baking tray. Keep a second baking tray and another sheet of baking paper ready.
Add the butter, sugar, salt, maple syrup and honey to a pan and place on medium heat. Stir continuously and heat until the sugar has dissolved. Put the pan to one side and leave to cool. Take care: the syrup will be very hot!
Place the other ingredients in a mixing bowl and mix with your hands. Then pour the syrup over the mixture and mix either with a wooden spoon or an electric hand mixer (using a dough hook). Mix well until blended. It is important that the liquid combines properly with the dry mixture, otherwise the bars will crumble when cut.
Spread the mixture 2 cm deep across the baking tray lined with baking paper. Place the second piece of baking paper over the muesli mix and use the second tray to press down on the mixture as hard as possible. Then place the tray with the mixture in the oven for 25 minutes.
Leave the baked muesli mixture to cool for several hours, and then slice it into bars using a sharp knife. If stored in an air-tight container, the muesli bars will keep for several days.
Tip: not a fan of almonds or coconut? You can swap any of the solid ingredients with different ones. Instead of super-healthy goji berries, you can also use other dried fruit like raisins or apricots. Make sure any larger fruit is finely sliced.
